The article notes popular food magazine EatingWell often uses canola oil in its recipes because it’s the “richest cooking-oil source of alpha-linolenic acid, an omega-3 fat that has been linked to heart health.”
The story of canola oil’s rise from a lubricant in steam engines to a staple in every kitchen is told in a new book Ingenious: How Canadian Innovators Made the World Smarter, Smaller, Kinder, Safer, Healthier, Wealthier, and Happier. In an interview with The Province, co-author Tom Jenkins showcases a bottle of canola oil as an example of innovation. The book was co-authored by Governor General David Johnston.
