An audience of nearly 800,000 from Spanish-language news networks across the U.S. tuned in Oct. 15 to watch registered dietitian and author Manuel Villacorta demonstrate healthier Latino cooking. He explained how simple swaps such as canola oil in place of lard create delicious, but better-for-you dishes. Villacorta also brought his message live to the set of the Los Angeles Univision station’s morning show.
