Canola Oil: Fat, Flavour, and Health
Now that low-fat foods have lost their appeal, Food in Canada reports that Canadian consumers are demanding foods higher in fat, flavour, and healthfulness. Shaunda Durance-Tod, manager of the CanolaInfo Program at the Canola Council of Canada, says concerns about heart health and other chronic diseases are guiding the replacement of saturated fat with unsaturated, plant-based fats like canola oil. “Many Canadian products [like salad dressings, hummus, and baked items] use canola oil,” she says.
