Hold Butter for a Healthy Wake-up

A popular breakfast indulgence just got a bit healthier thanks to canola oil. While many traditional waffle recipes call for melted butter in the batter, this recipe from the Chicago Tribune reduces calories and total fat while eliminating saturated fat by using canola oil instead of butter. In addition to canola oil, the recipe also calls for egg whites in place of whole eggs, replacing all-purpose flour with whole-wheat flour and topping the waffles with fresh fruit or yogurt instead of whipped cream or additional butter.
