Healthier snack choices made with canola oil at high school sports concession stands may sell as well or better than unhealthy foods, according to a new study, reports Consumer Affairs and United Press International. The research, published in the Journal of Public Health, found that when vendors substituted canola oil for coconut oil to prepare popcorn, sales remained strong. Overall concession revenue and income increased from the sale of healthier items, including carrots, apples and string cheese, suggesting a clear demand for such foods.
